Why does kombucha contain sugar? Sugar is the nutrient for natural fermentation. Over several weeks, this sugar is metabolized into healthy microorganisms, nutrients, vitamins and much more, so that hardly anything is left at the end. Kombuchery uses as little sugar as possible and is officially considered low in sugar.
